You are more than welcome, I'm just sorry you missed this years hunt, maybe next year everybody will be up on their feet and going. Shirley is doing alot better now, after they changed her rejection medicine. I will get it shipped to you in a few days, Enjoy the venison.

I'm really glad to hear that Randy. You folks have certainly been through the trials this year. It's doubly tough when your hospitol is 4 1/2 hours away. You must have the patience of Job by now. You and Shirley both. I'm trying out a real easy sausage recipe tomorrow night Randy.If it's any good I'll let ya know. You use minced bacon . 8 ounces per every pound of venison.

Hey Randy,
I thawed out a 2 pound package of stew meat. I wanted to experiment with sausage for the first time. Well, comes to find out Lyn tossed the old crank type because it was rusty. While she was busy i snuck on down to Walmart and got the electric pro model.MAN!!!! less than one minute ground that meat up . We will try her out tomorrow for breakfast. The recipe said ot cut it with 1/2 pound of bacon . Real easy to clean too...stainless steel. 72.00 ..not bad. My wife was ok with it. Our anniversary is Friday.,She smiled and said Happy Anniversary.LOL

Early Breakfast..4:00 AM The sauage is 5 Star awesome. Man ..I may need tofry a 2nd patty. The sausage is very simple to make and very good. Hope I get a hog this year.

Sure partner, also you will need to add a teaspoon of red pepper flakes. Needed spicing uip . Nice texture. Don't worry about real clean meat. Mine had stuff I normally would have cut off. I gave the grinder a test ..WOW !!I was impressed.NO gritty taste at all .It ground this flank stew meat up real nice. Don't forget the teaspoon of red pepper flakes. Good stuff man. I pattied the sausage up and refroze th esausage I didn't use. I've done refreezing before and it is ok Grind bacon and venison together.
Enjoy.

INGREDIENTS
[ul][*]1 pound ground venison[*]8 ounces bacon, minced[*]1 teaspoon ground sage[*]1/2 teaspoon ground ginger[*]1/4 teaspoon pepper[*]3/4 teaspoon onion salt [/ul]
DIRECTIONS
[ol][*]Combine the venison, bacon, sage, ginger, pepper, and onion salt in a large bowl; mix well. Shape into 12 patties using about 1/4 cup of mixture per patty. Patties can either be pan-fried or frozen for later use. [/ol]

Note
If you would like to start with a venison roast and grind it yourself, just cut the venison and bacon into chunks, then toss together with the seasonings before grinding and forming into patties.
