Back when my five oldest kids were in grade school, I noticed this trend beginning. The school calendar said "Winter Holiday" instead of Christmas Vacation, and the kids started learning about Hannakuh and bringing home papers about the mennorah (sp?). I couldn't believe it. I had no problem with my kids learning a little about other beliefs, but I know they didn't spend equal class time discussing Christ's birth.
As far as Christmas programs though, I'm very glad that our kids here still get to sing the songs I sang growing up here. There's nothing so sweet as hearing a class of first graders sing "Away in a Manger".
