Help!! Looking for a processor around Shiloh or Mt. Vernon, IL
I know this will be a vauge post, but last February I went to the St. Louis deer classic in Collinsville, Il and met a deer processor that I was really impressed with. I believe he was around Mt. Vernon or Shiloh, IL but I've since lost his number, but I do remember that he was right next to the deer mounts and across from Town Hall Archery. The reason that I was impressed with this processor is because he says he does not mix anyone's deer with anyone else's. I questioned him at lenth, ate about 10 lbs of his deer sausage and just couldn't believe how good it was. I really want to send him some cut up deer to grind in sausage, sticks, etc. However the problem is that I cannot remember his name, where he was from or anything that could get me to him. I do remember that he reminded me of the Amish due to his dress, but he wasn't. I think he was German Baptist, or methodist, or something with a "tist" on the end of the word. His lovely wife wore a white type of bonnet and all there clothes were homemade.
Hopefully anyone that went to the St. Louis deer classic got this guy's business card and can help me out.

Damn, wish I could help. I'm from Mt. Vernon but hunt a lot in Washington County. Any processing that we do, we take to a place in Albers...mostly smokey's and bacon...anything else we do ourselves. I might asked around since I'll be down there hunting this weekend.

Behrmans in Albers is alright but the best stuff comes from Trenton Process in Trenton. Best summer sausage and sticks around. Make a pretty mean hotdog and brat also.

We used to get some done in Vieanna, but since R&R bought it, prices have shot up, using illegals in back and other ridiculous price things.

That's right. I got their magnets. But in my head, from years past I think Miles brothers.
There's a great guy at Martin's Sharp-All on 146 west of 37 that I definately want to try out this season. Probobly bring some of our first ones over there. I think his name is Justin Martin and he's a very nice younger guywith a nice shop over there.
I went in there for sharpening had him take care of one of my favorite hunting knives that had some chips out of it from wacking some pelvic bones. He dressed that edge up FANTASTIC for only 5 bucks.
He'll be doing a bunch more of my knives in a few weeks - that's for sure.
He gave me a flyer for butchering when I was in there. If his butchering is reflected in the way he presents himself and his shop, well all should be dandy.
