me and a buddy were talking about the different ways people take care of their meat and i just thought i would throw this out and see who does what
i fix all of my meat myself, mainly because it is cheaper, but a butcher is easier and less of a headache
what do yall do ?

I always skin, gut, and quarter mine myself. Put it in a cooler and ice it down real good. Then I take it to a place in Thomasville called Johnsontown Mart. They only charge $35 and will cut and wrap it anyway you want. Saves me a lot of time. To cut it up myself it takes 3 to 4 hours including clean up plus they seem to get me more meat.

i do it all myself, quarter it down, strip out the backstraps and cut them into steaks, debone everything else, what i can' t make steaks out of goes into stew meat. wrap it, mark on it what it is and put it in the freezer. discard the hide, etc and it is all over but the eating. takes me about two hours from start to finish.

I' d like to add the ? How long do you all leave the hide on? I leave the hide on as long as possible to protect the meat.
I was talking to a guy and he says he leaves his on as long as possible to get a better flavor!
What is your opinions
