This seems like a very interesting concept. I wasn't aware that meat packing plants had used this technology to tenderize meat. It seems like a good idea but I wanted to get your thoughts before I try one out.
What's the matter Spencer, that brute of a boar turn out a little tough. Seriously though, I'm curious myself. Here in the south we don't have the luxury of aging meat by hanging it from a tree in the back yard.

Yeah, it's pretty tough. I saw this item in the SC Game & Fish magazine and it got me curious. It's pretty cheap and if it works I'm definitely going to buy one.
