Thompson Center is the best you can buy for interchangeable barrel single shots without going into custom rifles. Theres the NEF single shot which are as cheap in price as one thompson center barrel for the whole rifle. I've shot the TC encore in the 270 win and 30-06 and prefer the Ruger #1 by far.

Here is another option. Mossberg SSi. They make rifles, shotguns and extra barrels. Rifle calibers offered are .223, .243, .270, .308, .30/06. Probably can be had for $375.00-400.00. Extra barrels for a couple hundred.

New England Firearms (NEF) is a great place to start looking. Lots of options on calibers and stocks. If you want a step up in features look at H&R, built alongside the NEFs. The Ultra series comes with a real nice laminate stock. Get one of the latest model receivers and you have options all the way from .223, 22.250 to 45-70 and many in between- even shotgun barrels and muzzle loaders. IMO, these little rifles are an excellent value with tons of character. My Ultra in .308 has been hunting one year- one shot, one deer. And lots of attention back at camp. As bugsNbows mentioned the SSI isn't a bad looking rifle. MSR is over $500. but I've seen them in Gander Mountain new for $349. (If one Gander has them for that price.....that price can be had in any Gander Mountain!) I know currently the calibers don't match specifically what you are looking for....but that may grow in time. Different barrels are I think about $200. or a little more.
I handled several......and they seem to be nicely made!

I'll vote for the NEF too. Only drawback that I can see is you have to send the receiver back to have the extra barrel fitted. They don't just drop in like the Thompson. I'd like a .45-70 too as well as a 7mm-08 so I'm thinking while they have my receiver I might as well order the 2 barrels at the samr time and save a little on the shipping

H&R, No question, it will shoot as accurate as anything. For roughly $250-$275 it comes with a really nice laminated stock, extra rifle barrels are about $80 and shotgun barrels are about $40-$50, calibers, .223, .243, .25-06, .270, .280, .308, .30-06, .30-30, .357mag, .44mag, .22hornet, .45-70 and 450 marlin and a couple others.
