I'm willing to bet that there aren't many .375 H&H shooters who use it on deer, for starters - I certainly don't. And, it's not exactly a caliber I enjoy shooting from the bench like I do just about everything up to a .30-06.
Most bullets made for the .375 H&H are meant for animals like moose, big bears, african lions, and cape buffalo. Most of them have very sturdy jackets in comparison to your garden-variety .308-caliber bullets - or they're solids, which are wholly unsuitable for deer. Achieving any kind ofterminal performance other than blowing a hole in an animalis going to depend on what bullet you pick and how fast you drive it. I've used 300-grain Sierra BTSPs on elk a couple times, and in neither instance did the bullet expand much, though neither were recovered. One shot missed everything but the heart and lungs, the other went through both shoulders and effectively ruined the opposite quarter.
As far as the bench goes, my .375 doesn't particularly care what it's fed, it shoots everything just about the same - different brands, reloads -vs- handloads, etc.
Unless it's the only rifle you own, I'd use something smaller on deer, and something less punishing from the bench.
