Whats your go-to elk rifle? Mine is my Remington 700 300 UltraMag

I doubt that I'll ever be able to afford an elk hunt, but... I'd use my M700ADL .30-06 or my M700BDL 7mm Rem Mag.

Ruger No. 1B in 7mm Rem. Mag., w/Kahles Helia fixed-power 6X scope. Used w/ 175-grain Nosler Partition bullets & 70 grains of IMR 7828, MV 3070 FPS (26" barrel). Shoots 0.5MOA @ 200 yards (3-shot groups).
