Default Winchester Model 70 and a new stock

I have a Winchester M70 that I got from my grandfather 10 years ago. The synthetic stock is looking really rough and it needs to be re blued. If a professional does the work do I have anything to worry about like lose of accuracy.

Are you saying that you want to re-blue the metal *and* get a new synthetic stock? You could probably buy a new stock and do the switch-out yourself without much problem. Or, try just painting your old synthetic stock yourself. Krylon make a fusion spray paint that works really well for that. It's easy as can be and it would cost less than a box of shells.

IMO, the re-blue is a bit harder to do yourself. But to answer your question, (I think)I wouldn't think you would lose accuracy if a gunsmith would perform any service on it.

The gun might not shoot as well with a whole new stock, though, but if that happens there should be ways to remedy that. (e.g. free floating, glass bedding, etc.)

the stock needs replacing and the barrell needs to be re blued

The blueing has nothing to do with accuracy. The stock might effect it if it is putting pressure on the barrel but you could free float it then.
