What is the simplist depth /fish finder on the market. I want to buy one that is easy to use and holds up.One that shows structure , and fish. One that requires the least drilling/wires.

I would recommend an Eagle or Lowrance. Same company, the Eagle is the cheaper line. Look at the Lowrance 125, simple to use and for the price the best you can get IMO. Check ebay before buying, you can likely save quite a little money.
Yes, you need to screw the trasducer mount to the back of the boat, a hole for the power and transducer cables and a couple holes to mount the bracket. You can go with a trolling motor trasducer and eliminate a few of the holes. I think hummingbird makes a portable model that requires no drilling.
I like the transducer on the trolling motor. That way you know when you are right over the fish, not when you have gone past them. Of course if you want to use it with an outboard then you will have to mount it on the boat.
Can someone please explain how the fish finder is hooked up when hooking it to the trolling motor. About what do these cost.I have a birtday in June.Would this mean I don't have to drill a hole in the bottom of my small jon boat?

With a small john boat the trolling motor mount would probably be best. The transducer is connected to a large hose clamp that goes around the motor housing. Really easy to put on. You can get a new Eagle for around $85. With a john boat you probably won't have to drill any holes but the power cable will have to lay in the bottom of the boat.
When looking for one of these to buy from Cabelas.What do I ask for or buy. Will it tell in the part discription that this is for a trolling motor.and is there any other things I need to buy that won't be coming with the depth /fish finder.Thanks,
