Default best way to cook catfish?

my buddies have been trying to get me to do some catfishing with them but i have never been. they use goldfish for them flatheads in the Yadkin river. last week they caught 12 fish that totaled 178pounds. that gets me interested! anyway what time of day is the best time to fish for' um and what is the best way to cook' em?

For small Blue' s and Channel' s......dipped in egg/milk mix...salt and peppered....corn mealed....and pan-fried. Serve with hushpuppies or pan-fried cornbread, fries, and baked beans.

But for them big ole Flatheads, and for any catfish over 10 pounds in general.....stewed or marrinated and grilled...gets the muddy taste out. Very light marrinades, as not to overpower the fish. You " can" fry the big ' ens, but I just don' t like the taste myself.

We have Channels and yellow cats here. I agree with Catfish on how he cooks channels. I will cut them in steaks and prepair them in the same type coating but I deep fry them, OUTSIDE.
Catfish I am going to have to go out and catch me a mess of them now. Only thing you need to add is a onion pie and some good slaw. Now thats good eating.

Sometimes I just cut them in one inch square chunks and put them in the steamer then serve with melted butter. Poor Mans lobster. My doctor loves it when I fix them that way. HE! HE!
