Depends on the structure..I'ev caught big ones on 10 pound test..BUT these days I fish everything except panfish with 15 or 20 pound Power Pro..

Chicken liver is always a good bait but I use good ole redworms..

I use Fireline, it's expense about 15 buck a real, but it's worth it.
Try using cut bait or shad, liver and shrimp work good to. Many use night crawlers, but I've always done better by chumming the water and using shad. I chum the water by buing cheap cans of salmon or dog food and cutting holes in the cans, drop them in by where you are going to fish, let them sit in the water 30 before fishing and hand on.

I have a lake by the house where I drift with shad, I can catch yellows up to 20 pounds on 14 pound fire line.

Yeh Rev the old dog food can works great, use that many times but watch for warden Heh Heh.
