Northern WI is hard to beat then. Vilas county has a ton of great lakes to fish and and is a great area in general to vacation. Otherwise my nod would go to the boundary waters of Minn. and Can. One word to describe it - amazing!

Look into Lake Of the Woods in MNif you're willing to all the way to the border, it is a hot spot for all the species you are looking for. You can get into some big muskies too. Trust me, you wouldn't be disappointed.

I would try the Minn DNR for info otherwise good ol google may lead you to the right people - I've only been there with scouts when I was younger so I wouldn't even know who to talk to anymore. To be honest, lodging in the boudary waters consists of a tent generally and more often than not it's pretty rough camping, though I'm sure there are a few lodges in the area as well.

Come no further than Oneida and Vilas Counties, Wisconsin. We have pike of all size, in every lake.
