Default Rabbit Sausage

A month ago a few of us went out hunting and put a big hole in the local jackrabbit population. Anyways, we wound up getting just over 30 lbs of deboned meat, so my buddy decided to take the meat in to our local butcher and have it made into breakfast sausage. What a treat! These sausages were some of the best I`ve ever had. Don`t know what the guy did but were they ever good. They had the consistancy of pate.
A few sausages, homemade hash browns, scrambled eggs for breakfast and I can`t remember when I`ve had a better breakfast.
Just thought I`d share this to give you folks another idea of what to do with your rabbits.
