Default How do I make Wild Hog Sausage

Can someone please tell me what I need to add when I grind up a wild hog to make sausage?

as jersey said ; what kind do you wanta make.
I make a lot of smoked ; and I use A.C.Leggs old plantation sausage seasoning. it comes in several different blends. I use the reg. sausage blend.(country) it comes packaged for 25lbs. of meat. I also add instucure #1 to mine for smoked and none for fresh. the same seasoning works great for fresh.

if your gonna make a lot, get you a good sausage making book. it will give you a lot more info than you need,but it's worth the $$$

Sorry for the delay,
I forgot I had posted this. The kind of sausage that I could make pattys ,freeze them and them get them out for breakfast. Again, sorry for the delay, I had gotten side tracked in another area on this site.

Any flavor is OK with me. I'm preparing in case I get a big hog this year. I killed a small one before80 lbs. but they tell me if it's a big one you should sausage the whole hog.

10 lbs pork butt
4 tbls salt
1 tbls ground white pepper
2 tbls sage
1 tsp ginger
1 tbls nutmeg
1 tbls thyme
1 tbls ground red pepper (optional)
2 cups ice water

you may want to add extra pork fat, it's up to you, I add it to the venison so it doesn't come out to dry.

grind using 3/16" plate mix well, that's it. I use this for venison breakfast sausage and just add pork fat mmmmmgood.

Chuck,
Here in Tampa we can get Sicillian sausage which has Anis herb in it.
Sweet sausage!We grind 1/8lb of a pound of it to 1lb of wild pork.
Add a pinch of Paprika to it. Great sausgae!
