Default Shelf life of jerky

How long will home made (using dehydrator) last when kept in a dry jar? Weeks? Months? Years?

For small quantities, I find the jerky only lasts about a day or two before everyone gobbles it up. My freezer space is limited, however, and the thought occurs to me that I could convert less desirable cuts to jerky and free up freezer space for more meat -- provided the jerky lasts well.

Well around here it last till my son's and grandsons find it.
Make sure ALL FAT is removed from the meat. Fat will go rancid even in a vacume pack.
Do you dehydrate it? I mean dry not soft.

I agree the fat is a big contributor to shelf life. I also keep mine in a sealed glass jar, which seems to work better than plastic or ziplocs. However like others it don't last to long around these parts the kids, wife, friends, family members and of course me really munch it down.

I think the others have said it all.it want last very long if the kids find it.
I put it in vacume bags and give it to friends with there gifts,for a little something extra.I found some that was in the back of the cabaniet that was a little over a year old and still good.

Along this same line, Do any of you or have you ever tryed to dehydrate sausage?
A butcher near here has a large elect.dehydrator and does sausage and its great BUT will not give any info on how he does it.
Any thoughts or hints on how?

I have four kids , one nephew and one niece at my house so shelf life of jerky here is about 7min.

I know it is good for a year. Most of it gets eaten by our Maltese puppie in a matter of weeks. He loves it above all things to eat.
