Default Pheasant

As small game season starts this w/end in NJ , anyone have any tips/recipes for cooking pheasant & Quail ? Was thinking of cooking them on the grill.

I use the breasts as you would chicken, ie: pheasant parm, grilled and used in fahitas, or grilled with lettuce,tomatoe and mayo. The leg meat I save and freeze till it's worth while or the end of the season then I grind them up and use for taco's or chilie.

My mother use to cook the meat all off .Then butter and bread the meat and put it in a deep fryer.
