Default Anyone with a pickled beet recipe

Could use one. Made some about 2 months ago and can't find the recipe any where on the web or in my cookbooks. Everyone I gave some to wants more. Thanks in advance. jh

the one we use:
trim beets,(not into beet just trim the top off flush)cook till fork tender, not real soft.

use equal parts of sugar and vineger (red apple cider vinegar), 1 quart vineger to 1 qt. sugar,1 tsp. pickling spice.heat till sugar desolves.cut beets into 1/4 put in clean heated jars,pour liquid to cover,seal with lids and rings,let cool to seal.
best to wait a week or more befor useing.
we put up a bushel this spring,they are almost gone.

Try this one.....

3 lbs small whole beets
2 cups pickling vinegar
1/2 cup sugar
1 cup water
1 TSP whole allspice
6 whole cloves
3 inches cinnamon

Wash beets, leaving on root and 1 inch of tops. Cover beets with boiling water; simmer 25 minutes. Drain. Slip off skins and trim beets.
In large kettle combine vinegar, water, and suger. Tie allspice, cloves, and cinnamon in cheesecloth bag. Add spice bag to pickling liquid. Bring to boil; simmer 15 minutes. Pack beets into hot jars, leaving 1/2 inch head space. Cover beets with pickling liquid, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath(half pints) 30 minutes. Makess 3 halfpints. Double recipe if you like.
