we call them beer sticks here in MN. We do many pounds per year. Alot cheaper than buying. We like Terryaki flavor. We go to the local butcher shop and purchase the dry mix from them. It runs like 35 cents per pound of meat, the sheep casings run a couple bucks, and maybe 5 lbs pork trimmings added to mix. Total is about $10 for 25 pounds of beer stix. If you like a flavor your local butcher makes, hit them up for the spices. Taz

TC, beer in the sticks would be good right? You can purchase pre packed spice mixes at most decent outdoor stores(gander mtn, cabelas, etc.) they can get alittle spendy, but still alot cheaper than buying from butcher. Do a search on Yahoo for venison sausage recipes Taz

if you want it to be like a real slimjim just find a local chemical supplier and go through there listings and if you cant say it you probably need to add it to your meat and that should get it about right and just to be safe im kidding do not add strange chemicals to your food! only the slim jim company knows the correct combonation of wierd chemicals
