Here's one idea. Pack peppers into a pint jar, add 1/2 cupp white vinger, fill rest of jar with cold water, add a pinch of oregano, a couple cloves of garlic, a couple of drops of olive oil & a teaspoon of salt. Heat flats, seal & let sit for about a month. Have had great luck doing it this way. If you want them good & hot, stick them in the fridge for a couple of days before eating. Hope this works for you.

Pack peppers into hot steril jars
either whole or sliced.
Add a clove of garlic.
Make a brine of 10 cups water,2 cups white vinegar and 1 cup salt.
Bring brine to a boil then pour into the jars then seal.
Wait a couple of weeks and you have great pickled peppers.
