Well fella's for you all out there that like a good marinade i think you will appreciate this one:
1-2cups of soy sauce
1-clove of garlic
1-cup of brown sugar
-mix together add pepper if you want but absolutley no salt...Put marinade in a big zip lock bag and add........whatever you want to marinade for 6-8hrs if its chicken dont marinade as long, it gets mushy.

Substitute Kikkoman Garlic Teryaki sauce for an added flavor boost , it also makes a great jerky marinade .

Turkey Fan: Take your ingredients and add some pepper, 1/4 t spoon as you stated and some ginger about 1/2 t spoon and marinate some 1"-1 1/4"chunks of venison and turn it into some fine shish-ka-bob. Alternating slices of onions, peppers that have also been marinating. By the way I have a tape of the Emeril show that has my Wife and sister-inlaw in.

Turkey Fan,

If you like Emeril Lagase(sp) go to Foodnetwork.com. Punch in a search item and you can find tons of simple recipes from any given show. I like Emeril, Bobby Flay, Food 911,and the goofy guy that does Good Eats. Alot of these recipes can apply to wild game. Bobby Flay does alot of grilling shows.

You'll find recipes for rubs, marinades etc... When you find one you like you can print out a nice full page recipe. I have created a small booklet of recipes off foodnetwork.

Another great site is www.epicurious.com If you go thru and read the reviews you have a good idea of any changes that should be made before you try it. Haven't found any bad ones doing it this way.
