if youre talking 8 -18" river/stream trout,

i take them and gut them and remove all blood from vein under spine and gills, i wash them with cold water and then put parsley in the cavity and a light sprinkle of salt and a light sprinkle of lemmon pepper and pan fry lightly in butter, and that is all i do, i really dont like then seasoned much. yummy

now bigger ones i do many ways specify size and type if you want more info NY, plus im suprised that you get out and fish, thought you spend all your time huntin bigfoot!

1 Lemon pepper and salt, roll the fish in pancake mix, fill cavity with onions and fry in butter until golden brown.

2 Soak in 1-1/2 cups tender quick and 1 gallon of water overnight, put on grill with apple or cherry wood chunks on coals and smoke until cooked and enjoy.

These are my favorite ways for brookies and rainbows, 10 to 16 inches long.

Don't fry em. put in tin foil, add butter, lemon juice, splash of beer, salt/pepper and cook on grill for like 15 min. Enjoy.
