How do you cook catfish?

I like mine dredged in flour or corn meal and fried in a cast iron skillet. Butter if using flour, oil if using corn meal. and don't forget the salt.

Filet them and add corn meal and flour to a mix with some crushed red pepper, black pepper, salt, and texas pete. Roll in the mix and fry in a cast iron skillet or deep fry them.

depends on the size if its a huge cat ill cut it into nuggets and fry it if its a smaller one cut the head off and skin it then just fry it in corn meal in a skillet with peanut oil and with some potatoe salad and baked beans for a side it dont get no better

I like to dip mine in an egg wash then dredge in seasoned cracker meal to coat . Fry in a cast iron skillet with peanut oil .

If they are wild caught cat fish , I like to soak them in Buttermilk for 30 minutes or so to get some if the "muddy" flavor out of the fish then...

Pecan Crusted Catfish w/ Remoulade Sauce
4 Catfish fillets
1 bag of pecan pieces, crushed
1-cup cornmeal breader
1 tbsp. Phillips Blackening Seasoning
1/2-cup buttermilk
1 egg
Peanut oil (for frying)

Combine pecan pieces, cornmeal and Phillips Blackening Seasoning in one bowl.
Mix buttermilk and egg together. Soak catfish in buttermilk-egg mixture.
Roll in pecan breading. Fry in Peanut Oil over medium heat until fork tender. (About 1 1/2-2 minutes each side)

Remoulade Sauce
1/2-cup mayonnaise
2 tbsp. chili sauce
1 1/2 tsp. chopped sweet pickle
1 1/2 tsp. chopped dill pickle
1 tbsp. Dijon mustard

Mix together. Dollop on top on Pecan Crusted Catfish when finished cooking

Catfish w/ Cajun Crab Stuffing
4 Catfish Fillets
1 lb. Phillips Crab Meat, Claw
1/4-cup mayonnaise
2 egg yolks
2 tsp. Phillips Blackening Seasoning
1 tbsp. minced celery
1 tbsp. scallions

Mix all the ingredients but the fish in a bowl.
Split each fillet lenghtwise to form an envelope or pocket.
Fill each fillet with an equal amount of stuffing and bake in a 375-degree oven for 12-17 minutes or until the internal temperature reaches 165-degrees (legal disclaimer)

Topping
4 egg whites
2 egg yolks
1/4-cup mayonnaise
1 tsp. lemon juice
1/2 tsp. Tabasco
Salt and pepper to taste

Whip egg whites to stiff peaks. Blend and fold remaining ingredients into whipped egg whites.
Spoon the topping over the fish and place under the broiler for 2-3 minutes or until the topping is golden brown

I like to coat my pieces in French's Yellow Mustard, not too much, just kinda smear a decent coat on. Then I roll it in Uncle Buck's Hot-N-Spicy fish fry. Fry em up and eat away!

that sounds pretty good im setting out a trout line this weekend so ill try that one out

salt and pepper.put 3/4 yellow corn meal and 1/4 flour in brown papper bag toss fish in and shake.
Place in iron skillet with enough hog lard to just about cover , fry till golden brown and firm in the middle.
add a little potato slade and bake beans,a good cold beer and you have a meal fit for the king and queen.
