Default Walleye/Perch secrets?

hey everyone i am interested in hearing your favorite recipies for walleye/perch or even pike. I'll start off by sharing my favorite.....Make sure fish is deboned well......Cut the fillets into little 1 inch squares............In a bag combine equal parts of shakin bake and flour.....I like the crispy shakin bake the best........Add some garlic powder to the mix and maybe some lemon pepper if you desire........Then put the 1 inch peices of fillets into the bag and shakem up so they are breaded well........Melt a bunch of butter in a pan and have it good and hot (usually 1/2 cup).....then drop the pieces in there till they are golden on one side then flip them over.... It is a really good dish which my mom tries to beat but I could take her to fish cookin school anyday of the week......Hope to hear some more from ya'll.........ty

H, I worked for a certain "chicken franchise" about 30 yrs ago......beleive it or not, their coating mix worked wonders on walleye and perch. Too bad I don`t have access to more.
