Default Bear Recipes?

Does anyone have any suggestions for Black Bear recipes? My Dad got his first Pa Bear, and I' ve heard too many rumors that the meat sucks. Hope it' s not true.

The meat is good. I found that slow-cooking the roasts in a crock pot is the best. Just add veggies and cook on low for a few hours. YUM!

Bar-B-Q Bear
1(16oz) btl. ketchup
1(10oz) jar grape jelly
3-4 lbs. bear roast

Combine jelly and ketchup in saucepan, and heat until smooth. Place bear roast in crock-pot. Pour jelly and ketshup mixture over roast. Cook on high (300degrees) for 4 hours. With a wire whisk, stir mixture until meat is shredded. You may add onions and peppers to this recipe. Serving on hard rolls is really good or just eat plain.

HG89, try replacing that bottle of ketchup with same size jar of Hienz Chili Sauce plus a tbsp lemon juice, everything else is the same. The sauce gives a little zing to the meat.

I love that Hienz chille sauce. I like to add a dash of the green tabasco sauce as well.

My neighbor gave me 2 roasts from his bear. I used the crock pot recipe above with half catsup and half chili sauce and added an onion and pepper. BEST MEAT I EVER TASTED!!!
