whelen36, what kind of birds are we talking about? if its pheasant for example, I tend to breast them out. Not much good meat on the legs anyhow. To do that, simply use your fingers and peel the skin and feathers away from the breast meat. Trim off the meat and discard of the rest of the bird. You dont even get into the guts of the bird. Clean and easy. If you do want the leg meat, cut the leg off at the knee joint with some shears, and just continue to strip the skin off the bird down to the leg. Then use the shears to cut at the hip joint. I hope this is clear, I could show you alot easier than typing it

thanks and sorry , i forgot to mention , yes it is pheasants , and grouse as well

thanks bud , and is this way done by removing the meat from the bird , or like when you make a chicken or turkey in the oven , if it' s done that way i prefer to remove the guts. is this possible

ok so you want to cook it like a whole chicken or a whole turkey, just peel the feathers away fromt he body and put your finger in by the crop and grap and pull away from each other and then peal the guts out of it, then you should have the whole breasts bone and all, sorry if i didnt explain it well, its easier to show then to type on here, or do the step on the wings and pull on the foot rutine.
