Default Cod Recipe Help

I've got a hundred plus pounds of Cod fish along with some Salmon and Flounder I have to eat (quick). I have to make some room in the freezer for my Fall Deer and Sow.

Any new recipes will be welcome, I'm kind of stuck in a rut and need some new ideas.

all I do is is flour and fry in butter, brown some more butter and pour over boiled potatoes, no need for veggies. Also cod cakes are great along with cod stew, I use cod heads for it but any cod parts will do , recipe to follow. Ps. those are 55 and 60 lber's in my avatar.

Cod Stew

Take out the gills and simmer slowly till the head nearly falls apart and crumbles.

Cool and pick out all the meat and chill over night.

Also make some boiled red potatoes peel and chill over night.

When ready to eat, make a Bechamel (cream) sauce with butter, flour, milk, salt, pepper and horseradish to taste.

Cut up potatoes and heat thoroughly in cream sauce,
When nice and hot gently fold in cod meat to avoid breaking.

Works best with the head but I /you could use fillet if you want, by why waste fillet. Also dried ,reconstituted baccala works.

Baked Cod with tomatoes
1/2 lb Cod Fillet
3 slices of tomato
2 Tbsp Olive Oil
2 Tbsp Butter
Non-stick spray
1/4 cup Italian Bread Crumbs
Dash of salt
Dash of pepper
1/4 tsp parsley flakes
Lemon wedge

Heat oven to 400 degrees

1) Spray small oven safe baking dish with Non-stick spray
2) Place rinsed fish in dish and coat with olive oil, bread crumbs and tomato
3) Pat with butter and sprinkle with parsley flakes
4) Bake at 400 degrees for 12-15minutes till fish flakes easily


Baked Cod
On a sheet pan, lay down some foil. Lightly butter it. Put fillets on top and season with salt, pepper & garlic powder. Then heavily sprinkle with the following mixture:

Ritz Crackers (crush them to size of big bread crumbs)
melted butter (enough to moisten the crumbs)
chopped fresh parsley
Garlic powder
Salt
Pepper

Sorry I don't measure . Mix it all together and put on top of the fillets.

Bake at 350 for about 1/2 hour depending on thickness of fillets.

on one smoking site I visit there was a guy who smokes Cod. I thought this was sacrileges but I guess it's doable if you have that much and don't mind experimenting. Last time I had over 200 lbs was in the 80's when I used to set line . Heck we had 2600 lbs one day, not bad for a 40' old wooden vessel.

My son brought back a years supply of Cod (fillets) from Norway a few months ago and filled my freezer up (his freezer and everybodies freezer). I'm getting tired of breaded and fried.

I'm going to try your baked recipes, sounds good. My wife tried baking some, which was a dismal failure .

He has got some pictures if you are interested? A fishing buddy of his caught the biggest Flounder I've ever seen. They go up to Norway (way north up near the arctic circle) every year. If their timing is right they catch a lot of fish in the Fjords.

Cod is in my blood, I've been to Norway to go fishing and visit my Uncle's. I'm half a Viking myself. Had to edit my post as I'm frying some cod for dinner. You said your tired of bread crumbs.. I only fry with flour unless I have left over spaghetti and sauce/gravy then I will fry in Italian Fl. bread crumbs and serve with the spag. and a green vegy. for the wife's sake. LOl.
