Default Grinding my own Sausage

I've tried a few different times to grind Venison sausage and just haven't found a mix I like. I grind "bulk" sausage and package it in one pound packages. Tried a couple different seasonings, tried mixing pork and bacon with it etc. what do you guys mix to grind your sausage? I typically grind about 40lbs of sausage a year.

Heavy on the garlic and just a hint of cayenne here. Then, it's hickory smoke, bbq and eat.

Pork butt or pork trimmings then follow recipes from the book from http://www.sausagemaker.com/ it's the bible for smoking.
