Default Smoking Question

How do you smoke cheese without it melting? I smoked for the first time yesterday. Everything was delicious but the cheese is all over the place. I will have a tough cleaning job tonight.

When cheese is smoked it is cold smoked. There is no heat to melt it. Just like cold smoking salmon.

Comercial smokers use a machine but for the average Joe just Dig a hole for the fire and trench for a flue pipe(with Elbow) leading up hill the farther the colder the smoke will be, Sorta like an under ground chimney.Then the smoke house is put over one end and the fire in the pit at the other. Bury the pipe with earth. You get the Idea I hope.

I got the isea. Thanks. That' s not something I' ll be able to do with my electric smoker. Oh well. There are plenty of other things to smoke (food, that is).
