Default Bear Meat

Has anyone tried it? If so how did you like it? How did you cook it?

To tell you the truth I prefer bear over venison( I just do). To me bear tastes like pork and when the meat is smoked it tastes like ham(red in colour too). Just remember to cook it thouroughly. I aso make jerky out of it. You can pretty well get the same cuts of meat out of the bear as you would a deer. Try making some BBQed bear burgers or a nice stew. You may be pleasantly surprized.

I' ve butcher four Bear on my own and helped with many others and found it always to be more of a task than doing a Deer. The cuts are little different and since mine were all fall kills, there was always a lot of greasy fat to cut out and trim off. Unlike Deer, the fat is more marbled with the meat than layered on or inbetween.
Some of the cuts are very good as stated above but I found that it made great sausage once the fat was removed, mixed 1/3 pork with 2/3 Bear and then add whatever spices you prefer for the type of sausage you are making.

Logs...You' re right about being a pain to remove the fat. A big sow I killed a few years ago had OVER a 5 gallon bucket of fat encasing the body. It took longer to cut off that fat than it does to skin a whole deer.

The meat is good...unless you get a big older boar. Then the grinder is your best friend.

We try to take Bears 300lbs or larger and if possible we only take boars but some of the guys have taken dry sows. I think the smallest any of the groups has every taken was around 285lb. That isn' t bad for WI.
It' s getting hard to keep that standard with the Bear population in NW Wi as high as it has been the past 5 years.
I' ve had enough pref points to draw for 3 years now in area A1 but Im waiting until my buddy who lives up there locates a bigger Bear than I have harvested in the past.
Then I' ll try to get some meat, lard for soap and a brand new rug.

My Wife cooks it like a pot roast or wraps it in aluminum foil and slow cooks it in the oven. It is some of the best meat I have ever tasted. As for the fat, two of the Bears I have dressed out were very fat and I too took over five gallons of fat off. The other didn' t have any fat and the flavor was just a s good.

right on rbduck and ciastue.....I love the taste of bear meat. My wife really knows how to cook it so it is very tender and juicy.
