Default bear hind quarter?

Was given to me, whole....what to do what to do?

Can you trim it up. Seperate the muscles. Pour a little bit of liqiud smoke, sprinkle cayenne pepper, and add some dales. Then throw it on the smoker....... Let me know how it tastes. Never hunted bear, but if its good I'll give it a shot...

I've killed a few bears...and to be honest, I didn't care for the meat.

I eat wild game at least once a week...from squirrels to deer heart.....and the rich dark meat from a bear just wasn't my thing.

I love bear meat. Separate the three muscles so you get the top/bottom round roasts and the sirloin roast. You can also cut those roasts into steaks if you wish.The rest(scrap) can be made into stew meat or jerky. You can also roast the bones to add to a soup stock( this makes the stock very rich). Don`t forget about bear burgers also.

How does it do canned? Did my deer like that for the first time this year and it was phenominal. Wonder how bear would be?
