Are we talking bighorn, dall, stone or the rams out west or Alaska? Or are we talking about Corsican, Mouflon and the rams you will find on preserves throughout the country?

I was told that the Corsican rams were terrible eating. My son shot one and we tried it. I thought it was pretty good. We grilled the chops. Half with a rub and half with a marinade. Texture of lamb but more mild.

We got a corsican and it was pretty good. Cook the same as lamb.
