Default Beer battered perch

Went fishing on Monday, and caught 10 perch, so today I decided to cook them up. Here's what's needed and how it goes. Some people probably already do this, but I figured I would share it anyway cause it was really good. It works for catfish too, but I haven't had that for a few years.

(For about 10 perch, depending on size)

1 1/2 cups pancake mix
1 egg
1/2 can of beer, or until the batter is runny

mix together and then fry on one side until brown and then turn and fry until brown.

CB, when my friend and I go fishing in Northern Wisconsin and we catch a bunch of Walleyes, Crappie or Northern Pike, we cook them like that on the outdoor fire pit. I don't get any better than that !!!!!!

That beer batter works great on all kinds of fresh and saltwater fish filets. Mmm, I am going to have to take out some of the vacuumed sealed fish from my trip to the OBX and cook some fish tonight.
