slice it across the grain, pound it just a little.salt pepper, lowyers seasoning, garlic powder,a little cavunders seasoning.put into a ziplock bag, pour 1/4 cup zesty Italian salad dressing, mash out the air, seal and leave in fridge overnight.
remove and flour lightly, pan fry till brown.
nothing better.

by the way, take the rest of the bird and put into crock pot with an onion,a couple carrots, salt and pepper.cook overnight.remove from bones, take liquid and cook two cups of rice, mix with dressing mix and cook.

Cut the breast across the grain in 2 inch by 2 inch pieces and about 5 inches long. Take a knife and make a pocket in the piece of meat. Marinate in italian dressing for a couple of hours. Stuff the pocket with any type cheese that you like. Wrap pieces in bacon and cook on grill with indirect heat for a couple of hours. Use hickory chips for smoke. Very good.

who_else is it. Must be from my unspoken of side of the family.
Ya might inject the breast let it sit in the ice box a few hrs and then take it out and coat the breast with egg whites (mixed) then deep fry. Do this outside and follow the instructions. Real good.
Chef had some good rec. for these down the line somewhere.
