Default Perfect Fried Fish

Well,
Through experimenting I finaaly came up with the perfect fried fish..
This recipe is for 1 1/2 pounds of either crappie or bluegill fillets.

Pour just enough buttermilk over fillets and soak all night.

In a bowl mix 1 cup of yellow corn meal and 1 cup of corn flour and nearly 1/2 a cup of creole seasoning..
add 1 tablespoon of parsley and a good shake of salt..

Pre heat black skillet with about 1/2 inch deep of peanut oil..

Take fillets one at a time from butter milk and dredge through the mixture..and carefully place into the hot oil.Fry till golden brown..
