Default makin jerky

i have some taryaki (excuse my spelling) maranade in a bottle and some dry. i am going to try each one and see what i like better but do i have to add anything to the maranade? and i have another problem i have a dehydrater that i like to use but i have problems some times it doesnt come out right, like to dry or not done enough. do u have any awnsers for me. i used the oven and it works ok but i would think it would be better if i used the dehydrater and used it right. any answers would be great

Mrfishy- i would first look at the ingredient label and see what the first couple ingredients are I would think one will be salt. Taste the marinade. then decide what you think you want the flavor to be, and add that ingredient. let me know if i can help further.

Secondly, if your dehydrator is not drying evenly then there could be a couple of problems-

1 product not cut evenly. take your time and try to make all pieces the same length and thickness.

2- too much on the trays - place less on the trays and make more batches. this will also effect the top drying trays by not allowing the air to the top
