Default its in the pot

ok the rabbits are boilin now.. everyone said i had to boil them to get them tender...so there in there for couple hours ....when i take them out whats best...jus flour an them season an fry.....or bake them...... if so how in the world do ya bake them...im new to this cookin deal..... dont get me wrong i know how to bake something but how do u prep it

When the meat comes off the bones easily, let it cool and remove the meat then try one of these below.

Creamy Rabbit Casserole

1 ½ cups cooked rabbit meat
2- 3oz. Chicken flavour Ramen noodle soup
1 can cream of mushroom soup
½ soup can of milk

Cook noodles as per package directions. Add seasoning packets. Drain most of liquid. Stir in cream of mushroom soup, and milk. Add rabbit and heat thoroughly. Stirring often. Serve


Rabbit and Broccoli Casserole

1 rabbit
1 large onion, chopped
4 carrots, diced
½ cup celery, diced
1 package frozen broccoli spears
1 can cream of chicken soup
1 cup cheddar cheese, grated
Salt and pepper to taste

Cover rabbit with water in a large pot; add the onion, carrot, celery and salt. Cover and bring to a boil, reduce heat and simmer until meat comes off the bones. Cool and remove meat from bones. Place meat in the bottom of a glass-baking dish, layer with broccoli and add the soup. Bake at 350 for 1 hour. Remove top with cheese and place back in oven until the cheese is melted and bubbly.


Running Rabbit Hot Tamale Pie

Scraps of left over rabbit meat...enough to equal about 2 cups. (Can be varieties of game meat mixed)
1 medium sized onion chopped
Water to cover all generously
Boil until onion is fully cooked. Drain saving the broth. Put meat and onion through food chopper using fine blade.
(this is one of the old hand crank models, so using an electic one meat needs to be finely shredded but not paste).
Add chili powder to taste. I use enough to color the mixture about the same color of the chili powder. Add enough broth to moisten well - but not soupy.

Make corn meal mush using -

1 C. yellow cornmeal
1 C. cold water
Mix Well

Pour slowly into 3 C. boiling water with 1 tsp. salt added. Cook until very thick over low heat or in double boiler.

Grease a glass baking dish...size 8"X10"X1 1/2" with oleo .
Put a layer of mush in the bottom of pan. Put in the meat mixture on top of the mush, finally top with a layer of the mush. Grease the top layer lightly with oleo. Bake at 350 degrees until lightly brown around edges. (Will have a crusty appearence on the top.)

Serve with chili beans and lettuce wedges.

Chili beans are made by using :

2 Cans (16 oz) Red Kidney Beans
1 finely chopped onion
chili powder to taste

Saute onion in skillet with oil. Add beans and chili powder, cook until liquid is very low.

Soak lettuce wedges in ice water with garlic salt to taste.

This is my mother's recipe and it is wonderful. You can use chicken, turkey, beef, pork, venison, with the varieties being endless. Enjoy!





Critter Crepes

12 crepes 6" to 8" size
6 Tbs. butter
6 Tbs. flour
3 Cups milk
2 oz. Sharp cheddar cheese, grated
¼ cup white wine
1 10 oz. Can sliced mushrooms
½ tsp. liquid smoke
2 cups cooked chopped rabbit
10 oz. Frozen chopped broccoli

Make your own crepes or buy pre-made. In a saucepan, melt butter, blend in flour and salt, add milk. Cook and stir until thick and bubbly. Blend in cheese and wine, Remove and reserve ½ cup of sauce. In the main sauce add drained mushrooms and liquid smoke. In a bowl mix cooked chopped rabbit, cooked drained broccoli and ½ cup reserved sauce. Spoon about ¼ cup filling in each crepe and roll up jellyroll fashion. Arrange seam side down in a casserole. Pour sauce over, cover and cook over low heat or a 350-degree oven until hot through.
