OK Mulefoot, Here is a good simple plan, any time you are cooking in a pan you can add red wine near the end of cooking, Stews, stir fries sautes and sauces even chilli. this is how you get rid of the quarter bottles that sit around. any where from a 1/4 to 1 cup works fine.
Mule foot I missed the question "Fish" lets go with white wine for most.
An easy recipe, Need a few lbs of 1/2 to 1 inch filets Striper is good here.

mix 1/2 cup of white wine with 2 TBS dijon mustard and a squirt of lemon and a chicken bullion cube, heat to mix.
Salt and pepper the filets oil a baking pan and insert the filets.

Smear a few tablespoons of mustard on the fillets. Pour the mixture onto the fillets and bake till just flakey don't over cook. 375

Quick easy and if you like mustard it is great!!
