Default BRINE? Smoker Questions.

Finally finished my smoker. Tested it out and it seems to funnel smoke perfectly from the pit to the smokehouse and holds it good until it reaches the vent in the top.

What kind of brine should I use for fish? probably tuna or some kind of fatty fish if i can find it. And what do all of you recomend i do?
