Default Doves

How do you butcher doves, i dont need recipes because i have those already.

I clean them just like I clean out a duck. I just take out the breast meat, because that's all there is on a dove. take the dove and lay it on its back. now go to where the breast would be at and take both hands and pinch the feathers and the skin. tear the skin and feathers off *towards the wings* this should expose the breast. I use a filet knife for the next part. Now just cut the breast free from the ribcage. it's kinda hard to explain, but very easy to do.

i heard on the upland forum something like this, twist the wings off, work finger under breast and pull it up, then pluck it

Lay the dove on it's back and cut the wings off where they attach to the body. Pinch the skin and feathers at the bottom of the breast and pull up toward the head. Hook a finger under the breast a pull up toward the head, the breast should be faily easy to pop loose.
