I make breakfast sausage out of boar, I make summer sausage and "slim Jims" out of deer, I buy all my casings from two places, I buy synthetic casings for the summer sausage in the 1.75 inch Dia. and I buy cologen for fresh breakfast sausage and slimjims they are purchased in the 19 mm Dia. for slim jimms and 22 mm for sausage. check out these links .

I prefer these to "hog middles because the cologen are eatible and the synthetic just peel off as you slice the summer sausage. and require no care at all, just soak the synthetic in water to make them pliable before stuffing.
