Here are 2 recipies that I use:

CORN BREAD SAUSAGE STUFFING
1 1/2lb Bulk pork sausage
4 Onions ,diced
1 stalk celery, diced
6 C. fresh bread crumbs
1 tbl. salt
2 tsp poultry seasoning
2 tbl a-1 steak sauce
2 eggs - slightly beaten
1 c. chicken stock
6 c. crumbled corn bread

cook sausage in large skillet, over medium heat, breaking up with a fork. remove sausage to mixing bowl, reserving 1/2 cup of drippings in the skilet. saute onions ans celery in drippings intil tender. add sauteed vegetables to sausage mixture. add remaining ingredients and mix well. this shold be enough drresing for a 12 to 14 lb turkley.

Mississippi Cornbread Stuffing

1 c. minced onions
1 c. minced celery
1/4 c. minced parsley
1/2 c. margarine
5 c. corn bread crumbs
3 c. soft bread crumbs
1 c. chopped pecans
1 1/4 tsp salt
1/4 tsp black pepper
1 tsp sage
1/2 tsp thyme
1/2 cup sherry

saute onions, celery and parsley until tender. add remaining ingredients mix well.
