I do close to the same thing. I wrap them in bacon (maybe with a little jalapeno and cream cheese), give them a little salt and pepper, then throw them on the grill.

I like to cook the whole bird down low in gravy.

salt , pepper bird, flour put in fry pan in little grease , brown on all sides, put in pressure cooker for few min. to tender.remove and take drippings and add flour and make gravy. put in fry pan return birds, cover with gravey, simmer till biscuts are ready. Get Back,or Get Stomped ! [8D][8D][8D]

We do the same though they never make it to the freezer. We eat them the same day they are shot. Cut a fresh jalapeno in half and put it on the breast and wrap it with bacon then grill over a mesquite fire and they are excellent.

Do them like northtexan says, and if you like baste them with a little sweet barBcue sauce. It is sooooo good. I didnt get any doves this year. I didnt even get to go dove hunting! The worst part is that I got a new benelli M2 last year! EJ
