Smoked Raccoon
 
Last winter some boys put together a game feed in Story City so I volunteered to do some of the meat. They gave me one frozen deer leg and 3 large whole raccoons. I also donated 70lbs of turkey and about 20lbs of buffalo. I hickory smoked and cooked the meat over night and it turned out great. The raccoon just fell off the bone.

Sugguestion on smoking raccoon.

Raccoons are very fatty so I hung the raccoon in my smoker using some bacon hangers so the fat would run off and drain out. The fat acted as a moistizer and kept the meat from drying out.

Don't put anything under the raccoon if you can avoid it unless you want whatever is underneath it to get really greasy.

The raccoon was a big hit at the game feed.
