Default GREAT LAKES STEELHEAD

Any recipies for steelhead other than frying?Never liked them out of the frypan.Grilled?Baked?Broiled or anything else?Oh yeah,forget smoking,I already have that down to a science.Thanks for anything!!!

Baked (grilled) with shimp stuffing.

-Gut & Scale trout.
-Reverse fillet (cut out backbone & ribs from the gut cavity but leave outside skin intact. Head& tail optional).
-Stuff with bread cubes, basil/ parsley, salt & pepper,cocktail shrimp & moisten with lemon juice.
- Secure with string.
-Bake or grill until meat flakes. (depends on size and heat) (slow is better)
- Slice & enjoy

Poach the fillets in a light semidry white wine and serve with an herbed garlic butter and lemon wedges .

Use in a fish chowder, also works with Lake Trout.

We have breaded it with either bread crumbs and baked it or dipped in batter and baked.
