Default Hi Mountain Summer Sausage

Well I experimented with this brand that I bought from Cabella's and I give it all thumbs up , with a warning that it is highly addictive. I've never been a big fan of summer sausage,although the only kind I ever ate was beef. You know the kind you get for the holidays as gifts. Well this stuff is great. I only made a 3 lb batch to start with. Breaking it down to scale it called for 2.4 lbs of beef and .6 pounds of pork I just used 2 1/2 pounds of venison 1/4 pound beef fat and 1/4 pound pork fat. Then just followed the rest of the instructions although I cooked it all in my smoker, where by it says to finish in the oven andI cut the smoke back by half. Came out great. I recommend this product for all those who might be intimidated. It may also be done in an oven for those who do not own a smoker. Maybe just add a few drops of liquid smoke to the mix. Just don't over do it as it tastes fine with out that heavy smokey flavor. Some what on the line of genoa salami.
