RE: elk meat
Montreal Steak Seasoning. (most supermarkets have it in the spice aisle. It's made by McCormick)
Try my favorite: Blue Cheese Stuffed Elk(or venison)Burgers: 2 lbs ground elk w/10-20% beef fat added. Mix thoroughly w/ 4 tablespoons of Montreal steak seasoning. Divide seasoned meat into 4-6 even balls. From each of these balls, form 2 patties thinner that you normally would. Place approx 1 1/2 to 2 tablespoons of crumbled blue cheese in the middle of one patty. "Cap" that patty with the other and form them together. Take your time in doing this. Make the edges of the joined patties tight and squared. Dimple the patties in the center of each side to prevent them from shrinking into balls and grill or fry as you normally would. For a little extra flavor, render some salt pork in a frying pan if that is how you choose to cook it. Serve on a big, toasted sesame seed or onion bun. Blue cheese can be substituted with any other soft or semi-soft cheese. (Boursin is awesome, too)
