Default Fish Batter

Looking for new ways to prepare fish for shore lunches. Got a favorite
you want to share, would like to try it. Thank you.

I've tried different batters but keep going back to my old favorite.....just can't beat it. (The true test is when you cook for others and they want to know how you did that batter!!) It is crispy and sticks to the fish good, even pan fried.

For 3-4 lbs. fillets I take three eggs and two cups of milk, mix good. In a flat pan I put 3 cups of cormeal (I always use yellow meal) then add a tablespoon of Zatarain's Creole Seasoning (has Cayenne pepper), salt and pepper. Dip the fish in the egg/milk and immediately roll in the corn meal then fry till just right.
Anytime I cut up a large catfish and fry it, this is the way I do it. Can't go wrong.

I also like to smoke fish fillets in my smoker, basting them with Italian Salad Dressing while smoking.....good stuff.

I have 2 that I really enjoy.

The first is Hungry Jack Pancake mix. Just dip the fillets in some eggs/milk and then lightly dredge in the pancake flour. Fry and gobble.

The second is the best I've found. I use Nabisco breading mix. I buy it from a restaurant owner, but I think Sam's and Price Club carry it. I just dip the fish in egg/milk and then dredge in the Nabisco and a generous portion of crushed red pepper. Fry and gobble.

1/2 white flour & 1/2 pancake mix powder. Salt, pepper & garlic salt to taste. Put dry ingredients in plastic bag then shake to mix. Add fish fillets and shake. Place fish in very hot lard and cook till lightly browned.

Enjoy

Ps: Easy to carry for shore lunch.

summer. Every buddy has a different taste.
