Default Rabbit Burritos

Well, I got 9 rabbits last year, cooked some up a while ago with some soup and noodles and didn't like the taste too much. So, now I am eating my first attempt at rabbit burritos.

I soaked 2 whole rabbits in milk and a bit of Worcestershire sauce since Thursday morning until yesterday morning. I took them out, and placed them back in an empty pan to drain.

Today, I boiled the rabbits, then took the meat off the bones.

I then browned the meat in a little bacon grease.

I put them in a wrap with onions, green peppers, mushrooms, tomatoes, schredded cheese, sour cream and salsa.

Pretty good, and I can't taste the rabbits like I could on my last attempt.

Next time brown them in a bit of olive oil with some sliced onions. add garlic, 3-4 cloves, smashed, 2 tsps of oregano and 2tps of cumin. brown until onion is soft. Add 2 cups stock (chicken will work) and 2 cups of your favorite salsa, turn heat down and simmer for 2 hrs. remove meat from bones. mix meat with pan juices. wrap that in your tortilla and see how you like that in a burro.
