Organizing Photos...?

i was wondering how to organize photos by hour?? i have done it before but i cant remember where or how!! what i mean is say i have photos from january to now in order by date....how could i get every picture taken say at 5pm close together and then every picture taken at 6 in the next....sort by hour taken i guess would be what i mean....
